- Lower the temperature to 140 °C halfway through baking to achieve a gooey centre.
- Do not touch the cookies immediately after removing them from the oven.
Chef Tips from the Video
- Use very fresh butter and let it soften naturally at room temperature for optimal texture.
- Sift the flour and baking powder to avoid lumps.
- Add the milk chocolate chips only after baking so they stay shiny and melty.
Troubleshooting
Cookies spread too much and become flat.
Refrigerate the dough longer (30‑40 minutes) or reduce the size of the balls.
Cookies remain too soft in the centre after baking.
Lower the temperature to 130 °C for the final minutes or extend baking by 2‑3 minutes.
Edges are burnt but the centre is raw.
Bake at 150 °C from the start and cover the sheet with aluminum foil halfway through.
