- 10 cloves Garlic Cloves (peeled, whole cloves, fresh)
- 1 tablespoon Non‑Iodized Salt (sea salt or kosher salt, supports fermentation)
- 1 cup Water (filtered or boiled then cooled)
Instructions
Sterilize Jar and Lid
Wash the glass jar and its lid with hot, soapy water, rinse well, then place them in a pot of boiling water for 5 minutes. Remove and let them dry upside down on a paper towel.

Peel Garlic
Peel the garlic cloves, keeping each clove whole.

Prepare Brine
In a saucepan combine 1 cup filtered water with 1 tablespoon non‑iodized salt. Heat gently, stirring until the salt is completely dissolved, then let the brine cool to room temperature.

Pack Garlic and Add Brine
Place the peeled garlic cloves into the sterilized jar. Pour the cooled brine over the cloves until they are fully submerged, leaving about 0.5 cm headspace. Add a fermentation weight to keep the cloves under the liquid.

Close the jar loosely (or with a lid that allows gas release) and place it on a plate. Store the jar in a dark, room‑temperature spot (65‑75°F) for at least 7 days, preferably 14 days. Check daily that the cloves stay submerged.

After 7‑14 days, open the jar. Look for tiny bubbles, a mild sour (pickle‑like) aroma, and a greenish hue – all normal. Discard if you see mold, black spots, or a foul odor.
