- 1 tablespoon Olive Oil (extra virgin)
- 2 tablespoons Ghee (homemade, melted)
- 2 cloves Garlic (minced)
- 2 sprigs Fresh Thyme (fresh leaves stripped from stems)
- 2 leaves Bay Leaves (dried)
- 2 tablespoons Whiskey (for deglazing)
- 2 cups Chicken Stock (low‑sodium)
- 2 cups Beef Stock (low‑sodium)
- 0.5 teaspoon Black Pepper (freshly ground)
- 1 tablespoon Cherry Vinegar (adds bright acidity)
- 4 slices Baguette (sturdy, crusty, toasted)
- 1 cup Gruyère Cheese (shredded)
Instructions
Prepare the Onions
Peel the Spanish onions and slice them thickly, about 1/4 inch, so they hold their shape during caramelization.
Time: PT10M
Caramelize the Onions
Heat olive oil and melted ghee in the pot over medium‑high heat. Add the sliced onions, stir, and let them cook, starting on high heat until they begin to color, then reduce to medium‑low and continue stirring until they turn deep golden‑brown, about 40 minutes.
Time: PT40M
Add Garlic and Thyme
Stir in the minced garlic and fresh thyme sprigs. Cook for 2–3 minutes until the garlic becomes fragrant and translucent.
Time: PT3M
Deglaze with Whiskey
Add the bay leaves and pour in the whiskey. Allow the alcohol to evaporate while scraping the browned bits from the pot.
Time: PT2M
Add Stocks and Simmer
Pour in the chicken and beef stocks, season with freshly ground black pepper, and bring the soup to a boil. Reduce to a gentle simmer and cook uncovered for 30 minutes.
Time: PT30M
Temperature: Boil then simmer
Finish with Cherry Vinegar
Stir in a tablespoon of cherry vinegar just before serving to brighten the flavor.
Time: PT1M
Toast the Bread
Brush each baguette slice lightly with olive oil and place on a baking sheet. Toast in a 350°F oven until golden, about 5 minutes.
Time: PT5M
Temperature: 350°F
Assemble and Broil
Ladle hot soup into oven‑safe bowls, place a toasted bread slice on top of each, sprinkle generously with shredded Gruyère, and broil on high until the cheese is bubbling and golden brown, about 5 minutes.
Time: PT5M
Temperature: Broil high
