Chef Tips from the Video

- Rum adds a subtle aroma; adjust the amount to your preference.
- Scoring the centre prevents the wonders from bursting during frying.
- Serve warm to enjoy the contrast between crispness and melting sugar.
Troubleshooting
The dough is too sticky.
Add 1‑2 g of flour and knead until it releases from the bowl.
The wonders do not puff.
Check that the baking powder is still active and that the oil is truly at 180 °C.
Oil is not hot enough, the wonders absorb too much oil.
Wait until the thermometer reads 180 °C before starting frying.
Powdered sugar does not stick.
Dust immediately after frying, while the wonders are still hot.
Storage
Refrigerator: Store in an airtight container 1 to 2 days. Warm slightly before serving.
Freezer: Not recommended: texture becomes soft after thawing.
Room temperature: Consume the same day, otherwise they lose their crunch.
Make-Ahead Tips
- Prepare the dough the day before and let it rest in the refrigerator; bring back to room temperature before shaping.
- The wonders can be fried ahead and quickly reheated in the oven at 150 °C for 5 minutes.
