Critical Steps — Do Not Skip
- Avoid over‑burning the red chilies – it will impart bitterness.
- Allow all roasted spices to cool completely before grinding.
- Grind spices in small batches to prevent the grinder from overheating.
Chef Tips from the Video
- Let the roasted spices cool slightly before grinding; this retains the oil aroma.
- Mix 1‑2 tablespoons of the masala into tandoori chicken or paneer, marinate for 30‑45 minutes, then grill or bake.
- If a deeper red color is desired, add a little red chili powder or natural beetroot powder.
Troubleshooting
Masala turned bitter
Do not let roasted red chilies or cinnamon burn; next time roast for a shorter time and remove from pan immediately.
Powder is too coarse
Grind again in the grinder, or sift out large pieces.
Moisture entered the masala
Grind only after the roasted spices are completely cooled and store in an airtight jar.
