Ingredients
- 1 kg Basmati Rice (Good quality, long-grain)
- 1 kg Chicken (bone-in pieces preferred) (Medium cut, skinless)
- 0.5 kg Tomatoes (Ripe, chopped)
- 3 medium Onions (Thinly sliced)
- 1 cup Oil (Cooking oil (refined/sunflower/canola))
- 1 tbsp Ginger-Garlic Paste
- 1 packet (about 50g) Shan Biryani Masala (Or any brand of biryani masala)
- 1 tbsp Whole Garam Masala (bay leaf, cinnamon, cloves, black cardamom, green cardamom, whole black pepper)
- 2 tbsp Salt (For boiling rice)
- 1/2 tsp Edible Food Color, yellow/orange (Turmeric/orange color, optional)
Instructions
Soak Rice
Rinse the basmati rice 3-4 times until clean, then soak in water for 30 minutes.

Boil Rice
In a large pot, bring water to a boil. Add 2 tbsp salt, 1 tbsp oil, and whole garam masala. Add the soaked rice and boil for 10-15 minutes or until 90% cooked.

Strain & Spread Rice
Drain the rice using a colander and spread it in an open bowl or tray so steam escapes and grains do not stick together.

Brown Onions
Heat 1 cup oil in a large pot. Add sliced onions and sauté over medium heat until golden brown.

Prepare Masala
