Chef Tips from the Video
- For extra crunch, add a small handful of fine breadcrumbs on top before the last minute of baking.
- A drizzle of balsamic vinegar just before serving adds a pleasant acidity.
Troubleshooting
Leeks are too soft.
Reduce the pan cooking time to 3 minutes and keep them slightly crunchy before adding the sardines.
The dish is too dry.
Add an extra spoonful of sardine oil or a drizzle of olive oil before baking.
