Chef Tips from the Video

  • Use high‑quality grated cheese (Gruyère or Emmental) for a richer flavor.
  • Add a small touch of fresh thyme with the leeks for more aroma.
  • For a lighter version, replace half the cream with Greek yogurt.

Troubleshooting

The leeks remain too wet after cooking.

Extend the uncovered cooking for 2‑3 minutes to evaporate excess water.

The pastry does not rise and stays soggy.

Prick the pastry base with a fork before adding the filling and bake in a pre‑heated oven.

The quiches are too dry.

Ensure the egg‑cream proportion is correct and do not exceed the maximum baking time.
