- 1 tsp Vanilla Extract
- 2 tbsp All‑Purpose Flour
- 200 g Sour Cream (full‑fat)
- 3 Eggs (large, at room temperature)
- 200 g Fresh Strawberries (halved for garnish)
Instructions
Prepare the Crust
Place the digestive biscuits in a food processor and pulse until fine crumbs. Transfer to a bowl, add the melted butter and 2 tbsp granulated sugar, mix until evenly coated. Press the mixture firmly into the base of the 20 cm springform pan, smoothing with the back of a spoon. Chill while you make the filling.

Blend the Filling
In a clean mixing bowl, beat the cream cheese until smooth. Add caster sugar and vanilla extract, continue beating. Sprinkle in the flour, then fold in the sour cream. Finally, add the eggs one at a time, mixing on low speed until just combined. Do not over‑mix.

Assemble and Bake
Pour the filling over the chilled crust, smoothing the top with a spatula. Place the springform pan on a baking sheet and bake in a pre‑heated fan oven at 140 °C for 40 minutes, or until the centre is just set and the edges are lightly golden.
