Ingredients
- 500 g Red onions (purple) (peeled and sliced into thin strips)
- 250 ml White wine vinegar (fine, unflavored vinegar)
- 250 ml Filtered water (filtered tap water or mineral water)
- 30 g White sugar (about 2 tablespoons)
- 5 g Salt (about 1 teaspoon, optional)
- 10 g Sesame seeds (for the side salad, optional)
- 10 g Sunflower seeds (for the side salad, optional)
Instructions
Prepare the onions
Remove the skin from the red onions, then cut them into thin strips using a sharp knife.

Prepare the brine
In a saucepan, combine the water, vinegar, sugar, and salt. Stir until fully dissolved.

Boil the brine
Bring the saucepan to a boil for 2 to 3 minutes, then remove from heat.

Sterilize the jars
Submerge the glass jars and their lids in a large pot of boiling water for 10 minutes, then drain and let them air dry.

Fill the jars
