Chef Tips from the Video
- Use a homemade spice blend (paprika, cumin, coriander, mild chili) to customize the flavor.
- For ultra‑crispy skin, let the drumsticks rest uncovered in the refrigerator for 30 minutes before cooking.
- Serve with fragrant basmati rice or a crunchy coleslaw.
Troubleshooting
The chicken is dry
Add a drizzle of oil or broth over the drumsticks before the second bake and loosely cover with foil for the first 20 minutes.

Dry the chicken completely before adding the sauce and thoroughly massage the paste onto each piece.
The skin isn’t browned enough
Increase the temperature to 180 °C for the last 5 minutes or switch the oven to broil mode.
