Instructions
Prepare the Sausage
Pierce each sausage link with a pin and gently squeeze to pop the casing off, then crumble the meat into a bowl.

Dice the onion, slice the red bell pepper, mince the garlic, slice the spring‑onion greens, dice the tomatoes and roughly chop the parsley.

Heat the skillet over medium‑high heat, add 1 tbsp olive oil, then add the diced onion. Cook, stirring occasionally, for 5‑6 minutes until softened and lightly golden.
