Chef Tips from the Video
- Use sea-salted butter for a perfect sweet-salty contrast.
- Add a pinch of fleur de sel to the batter to enhance the spice flavor.
- Break the speculoos by hand to keep pieces of varying sizes; this adds crunch.
- Cover the pan during cooking ensures even cooking and prevents the top from drying out.
Troubleshooting
The caramel burned and tastes bitter.
Remove immediately from heat, add a tablespoon of water and stir to neutralize the burn. Restart with fresh sugar.
The cake sticks to the pan and does not release.
Ensure the heat is low and the caramel has properly coated the apples. Cook a little longer before attempting to flip.
The egg whites do not form peaks.
Check that the bowl and whisk are perfectly clean and dry, and that no yolk is present. Add a small pinch of salt to stabilize.
Storage
Refrigerator: Store the cake covered for 2‑3 days in the refrigerator.
Freezer: Wrap tightly and freeze up to 1 month.
Room temperature: At room temperature, consume within the day.
Make-Ahead Tips
