Cost: $4.30 total, $1.08 per serving
Ingredients
- 3 medium Potatoes (peeled and diced)
- 2 cups Whole wheat flour (atta) (for dough)
- 2 teaspoons Salt (1 tsp for dough, 1 tsp for filling)
- 0.5 teaspoon Turmeric powder (for flavor and color)
- 0.75 cup Water (lukewarm for dough)
- 3 tablespoons Desi butter (pure dairy butter) (for cooking and flavor)
- 2 tablespoons Fresh cilantro (optional) (chopped, mixed into filling)
Instructions
Boil potatoes
Peel the potatoes, cut them into uniform chunks and place in a saucepan. Cover with cold water, add a pinch of salt and bring to a boil. Cook until the potatoes are fork‑tender, about 15 minutes.
Time: PT15M
Temperature: 100°C
Mash and season potatoes
Drain the potatoes and immediately mash them while still hot. Add 1 tsp salt and ½ tsp turmeric powder. Mix thoroughly with your hands until the mixture is smooth and uniformly colored.
Time: PT5M
Prepare dough
In a mixing bowl combine 2 cups whole‑wheat flour with 1 tsp salt. Gradually add ¾ cup lukewarm water while kneading until you obtain a soft, non‑sticky dough. Cover with a damp cloth and let rest for 10 minutes.
Time: PT15M
Divide dough into balls
After resting, divide the dough into four equal portions and roll each into a smooth ball. Keep them covered with a damp cloth to prevent drying.
Time: PT5M
Roll dough circles
Lightly flour a clean surface. Take one dough ball and roll it into a 4‑inch (10 cm) circle, keeping the thickness even.
Time: PT20M
Fill and seal parathas
Place about a quarter of the mashed potato mixture in the centre of each rolled circle. Bring the edges together, pinch to seal like a dumpling, then gently flatten and roll again into a 6‑7‑inch (15 cm) paratha.
Time: PT15M
Cook parathas in butter
Heat a tawa or non‑stick skillet over medium heat. Add 1 tsp desi butter, let it melt, then place a paratha. Cook 2‑3 minutes until golden spots appear, flip, add another tsp butter and cook the other side 2‑3 minutes. Repeat for all parathas, using a total of about 3 tbsp butter.
Time: PT20M
Temperature: Medium heat (~180°C surface)
Serve
Serve the hot aloo parathas immediately with plain yogurt, pickle, or a dollop of butter.
Time: PT2M

- Serve with plain yogurt or tangy pickle to balance the richness
Troubleshooting
Filling leaks during rolling
Seal the edges firmly and press gently. Chilling the filling for 10‑15 minutes makes it firmer and easier to seal.
Paratha sticks to the pan
Ensure the skillet is properly heated and use enough butter. A non‑stick tawa helps prevent sticking.
Butter burns and turns black
Cook on medium heat; add butter after the pan is hot, not before. If butter begins to brown too quickly, lower the heat.
