Instructions
Prepare the eggplants
Preheat the oven to 200°C (400°F). Wash the eggplants and cut them in half lengthwise. Lightly score the flesh with a knife to help cooking. Drizzle olive oil over the cut sides, then season with salt and pepper.

Bake the eggplants
Place the eggplant halves cut side up on a baking tray. Bake in the preheated oven at 200°C (400°F) for 30 minutes until the flesh is tender and slightly golden.

While the eggplants bake, heat a small amount of olive oil in a saucepan over medium heat. Add minced garlic and sauté briefly until fragrant (about 30 seconds).
