Ingredients
- 200 g Cooked Short‑Grain Rice (leftover Japanese or sushi rice, warm for easier mixing)
- 2 tsp Black Sesame Seeds (toasted for extra aroma)
- 2 tsp Soy Sauce (regular or gluten‑free tamari)
- 2 tsp Sesame Seeds (plain, toasted if desired)
- 1 tbsp Spring Onion (green part only) (finely chopped)
- 0.25 tsp Salt (regular table salt)
- 4 sheets Parchment Paper (cut to 8‑inch (20 cm) squares)
Instructions
Cut parchment paper
Using a knife or scissors, cut parchment paper into four 8‑inch (20 cm) squares.
Time: PT1M
Mix soy sauce & black sesame rice
Place 100 g of cooked short‑grain rice in a bowl, add 2 tsp soy sauce and 2 tsp black sesame seeds, then mix until evenly coated.

Spread and flatten first batch
Lay one parchment square on a clean surface, spoon the rice mixture onto it, cover with another parchment square, and roll with a rolling pin until the rice forms a very thin, even circle.

First microwave cycle
Remove the top parchment sheet, place the bottom sheet (with rice) in the microwave and cook on high for 2.5 minutes (800 W) or 3.5 minutes if your microwave is 600 W.

Flip and second microwave cycle
Carefully peel off the bottom parchment, place the other parchment on top of the rice, flip the whole thing, and microwave for another 2 minutes (adjust time for lower wattage).

Cool first batch
Remove from microwave, let the cracker cool completely on a rack before handling.

Mix spring onion & sesame rice
In a clean bowl, combine the remaining 100 g cooked rice with 2 tsp sesame seeds, 1 tbsp chopped spring‑onion greens, and 0.25 tsp salt; mix well.

Spread and flatten second batch
Repeat the spreading, covering with parchment, and rolling process for the spring‑onion mixture.

First microwave cycle (second batch)
Microwave the second batch for 2.5 minutes (or 3.5 minutes at 600 W).

Flip and second microwave cycle (second batch)
Flip the cracker as before and microwave for an additional 2 minutes.
