- Choose seasonal fruit for more color and flavor.
Troubleshooting
The flan does not set after refrigeration.
Check that the milk reached a boil with the powder. If the mixture was too thin, add 1 extra tablespoon of powder and re‑heat slightly before refilling the ramekins.
The orange jelly remains liquid.
Ensure the gelatin was fully softened and completely dissolved in the hot juice. If needed, add an extra gelatin sheet and let the mixture re‑heat 1‑2 minutes.
The fruit sinks to the bottom of the dessert.
Pour the orange jelly when it is warm but not cold, so it solidifies quickly around the fruit.
Storage
Refrigerator: Store in the refrigerator in the ramekins, covered with plastic wrap, up to 2 days.
Freezer: Not recommended; the texture of the flan and jelly degrades.
Room temperature: Do not leave at room temperature for more than 2 hours.
Make-Ahead Tips
- Prepare the flan and let it set the day before.
- Make the orange jelly and let it cool completely before assembling.
- Store the cut fruit separately in the fridge and add just before serving.
