Ingredients
- 400 g Chicken breast (cut into thin strips)
- 2 c. à soupe Olive oil (for cooking the chicken and vegetables)
- 1 c. à café Salt (to adjust to taste)
- 1/2 c. à café Ground black pepper
- 1 c. à café Curry powder
- 1 c. à café Dried garlic powder
- 1/2 c. à café Ground ginger
- 1/2 c. à café Turmeric powder
- 2 c. à soupe Fresh cilantro (chopped, to add at the end of cooking the chicken)
- 1 Red bell pepper (cut into strips)
- 1 Onion (thinly sliced)
- 1 Garlic clove (crushed)
- 1 c. à café Dried oregano
- 1 c. à café Dried thyme
- 4 Wheat tortillas (large, preferably 25 cm in diameter)
- 200 g Grated cheese (cheddar, mozzarella or quesadilla blend)
Instructions
Season the chicken
In a bowl, mix the sliced chicken with salt, pepper, curry, garlic powder, ginger, turmeric and fresh cilantro.

Cook the chicken
Heat 1 c. à soupe olive oil in the pan over medium heat. Add the seasoned chicken and cook 8 minutes, stirring regularly until well browned and cooked through.

Set aside the chicken
Transfer the cooked chicken to a plate and keep warm.

Sauté the vegetables
In the same pan, add a drizzle of olive oil, the bell pepper, onion and garlic clove. Increase heat to medium‑high, cover and cook 5‑10 minutes, stirring occasionally until vegetables are tender.

Season the vegetables
Sprinkle the vegetables with salt, pepper, oregano and thyme. Mix quickly.

Prepare the filling
Combine the cooked chicken with the sautéed vegetables in a large bowl.

Lightly heat the pan over low heat. Place a tortilla, sprinkle 50 g grated cheese, add a generous layer of filling, then top with another tortilla.

Cook the quesadillas
Cook 2‑3 minutes on each side until the surface is golden and the cheese melted. Add a drizzle of olive oil on the un‑cooked side if needed.
