Ingredients
- 1 Large Onion (about 300 g, peel and core out)
- 2 Tbsp Unsalted Butter (melted for the spice mix)
- 1.5 tsp Salt (adjust to taste)
- 1 tsp Chili Powder (mild to medium heat)
- 0.5 tsp Coriander Powder
- 2 Tbsp Olive Oil (extra‑virgin preferred)
- 2 Tbsp Tomato Puree (gives a rich colour)
- 1 Unsalted Butter Stick (cut into a small piece and placed in the centre of the onion)
Instructions
Prepare the Onion
Trim the onion's top and bottom, peel off the outer skin, then cut a shallow cone out of the centre with a knife, keeping the outer layers intact. Remove the extra onion flesh and set it aside for the spice mix.

Melt Butter for the Mix
Melt 2 Tbsp of butter in a small saucepan or microwave until just liquid.

Make the Spice Mixture
In a mixing bowl combine the melted butter, 1.5 tsp salt, 1 tsp chili powder, 0.5 tsp coriander powder, 2 Tbsp olive oil and 2 Tbsp tomato puree. Mix until a smooth paste forms.
