- Watch the broiling to prevent the cheese from burning.
- Sauté the zucchini over medium heat so they release their water without burning the garlic butter.
Chef Tips from the Video
- Use a blend of cheeses (Gruyère + cheddar) for deeper flavor.
- Lightly sprinkle gluten‑free breadcrumbs before broiling for extra crispness.
- Add a pinch of grated nutmeg to the sauce for a warm note.
Troubleshooting
The cheese sauce separates or becomes grainy.
Remove the saucepan from heat immediately, add the cheese in small amounts and whisk vigorously. If needed, incorporate an extra tablespoon of cream.
The zucchini remain too watery after baking.
Increase the baking time by 5 minutes or let the zucchini drain on paper towels before adding the sauce.
The top of the gratin does not brown enough.
Broil the dish longer (1–2 extra minutes) while constantly monitoring.
