Ingredients
- 1.5 kg Chicken cut into pieces (Whole chicken cut into thighs, drumsticks and breasts)
- 1 piece Onion (Medium, peeled and coarsely chopped)
- 30 g Fresh ginger (Peeled and chopped)
- 4 cloves Garlic (Crushed)
- 2 pieces African pepper (Scotch bonnet or hot pepper) (Deseeded and finely chopped)
- 120 ml Water (About ½ cup, warm)
- 2 cubes Chicken bouillon cubes (Maggie or similar) (Can be replaced with a homemade bouillon cube)
- 1 tsp Salt (Adjust to taste)
- 500 ml Vegetable oil (peanut or sunflower) (For frying, heat to 180°C)
Instructions
Prepare the aromatics blend
In the blender, place the onion, ginger, garlic, African pepper and half a cup of water. Blend for about 1 minute until a smooth puree is obtained.

Steamed cooking of the chicken
Place the chicken pieces in a large pot, pour in the aromatics blend, add the salt and the two bouillon cubes. Stir lightly, cover and cook over medium heat for 18 minutes.

Finish the steamed cooking
Stir the chicken once, then continue cooking over medium heat for another 3 minutes.

Remove the chicken from the broth
