Prep: 1 hr 20 min | Cook: 17 min | Total: 1 hr 52 min
Cost: $5.90 total, $0.98 per serving
Ingredients
- 5 liters Whole Milk (full‑fat milk gives the creamiest paneer)
- 2 tablespoons White Vinegar (distilled white vinegar, adds acidity)
- 2 tablespoons Apple Cider Vinegar (mild flavor, used together with white vinegar)
- 1 piece Cheesecloth (muslin cloth for draining curds)
Instructions
Gather Ingredients and Equipment
Measure out 5 L of milk, 2 Tbsp white vinegar, 2 Tbsp apple cider vinegar and have cheesecloth, colander, pot, spoon and mold ready.
Time: PT5M
Heat Milk to Boiling
Pour the milk into the pot, place over medium heat and stir gently. When small bubbles form, increase heat and bring to a rolling boil, watching closely to avoid scorching.
Time: PT15M
Temperature: 100°C
Add Vinegar to Curdle
Remove the pot from heat. Add 2 Tbsp white vinegar and 2 Tbsp apple cider vinegar, stirring gently. If curds have not fully separated, add a little more vinegar (up to 4 Tbsp total) until the whey turns yellow‑green and the curds are distinct.
Time: PT3M
Rest to Complete Curdling
Let the mixture sit off the heat for about 2 minutes so the curdling finishes.
Time: PT2M
Strain Curds Through Cheesecloth
Place the cheesecloth over a colander and carefully pour the curdled milk through, allowing the whey to drain. Gather the cloth corners and let excess liquid drip away.
Time: PT5M
Mold the Paneer
Transfer the drained curds onto a cheesecloth‑lined mold or small container. Fold the cloth neatly over the top and place a weight (e.g., a heavy plate or brick) on it.
Time: PT5M
Set Paneer
Allow the paneer to sit at room temperature for about 1 hour (or up to 2 hours) until it firms up.
Time: PT1H
Unmold and Cut Paneer
Remove the weight, unwrap the cloth and lift the paneer block. Cut into 1‑inch cubes or desired shapes with a sharp knife.
Time: PT5M
Store Paneer
Place the paneer cubes in a container, cover with fresh cold water, seal the lid and refrigerate. Change the water daily if storing more than 2 days.
Time: PT2M
