Ingredients
- 250 g Dried red beans (Soaked overnight then drained)
- 500 ml Water (For cooking the beans and the sauce)
- 2 c. à soupe Vegetable oil (Sunflower oil or other neutral oil)
- 2 gros Onions (Finely chopped)
- 2 gousses Garlic (Crushed)
- 1 cm Fresh ginger (Grated)
- 1 moyenne Tomato (Coarsely chopped)
- 1 c. à soupe Tomato paste
- 1.5 c. à soupe Tomato coulis
- 1.5 c. à café Turmeric (powder)
- 1 c. à café Cumin (powder)
- 1 c. à café Paprika
- 1 c. à café Cumin seeds
- 2 Bay leaves
- 2 Cloves
- Quelques Black pepper (whole)
- Quelques feuilles Fresh coriander (For garnish)
- Au goût Salt
Instructions
Drain the beans
After soaking them overnight, rinse the beans under cold water and drain them in a colander.

Cooking the beans
Place the beans in the pot, add 40 ml water, 1 tsp turmeric, 2 bay leaves, 2 cloves, a few peppercorns and salt. Bring to a boil then cook for 25 minutes over medium heat.

Preparing the aromatics
Finely chop the two onions, crush the garlic cloves, grate the small piece of ginger and cut the tomato into large dice.

Sauté the onions
Heat 2 tbsp oil in a pan over medium‑high heat. Add the onions and sauté until golden for 5 minutes, stirring regularly.

Cooking the spices
