Ingredients
- 1 cup Milk (whole milk, at room temperature)
- 0.5 cup Plain Yogurt (full‑fat, unsweetened)
- 0.25 cup Honey (prefer raw or organic)
- 1 tablespoon Desi Ghee (softened, room temperature)
- 1 cup Semolina (Rava) (fine grade, sifted)
- 1 cup Jaggery (Gud) (grated or finely chopped)
- 0.5 teaspoon Baking Powder
- 0.25 teaspoon Baking Soda
- 1 sheet Butter Paper (Parchment) (cut to fit the cake tin)
- 1 leaf Fresh Basil Leaf (for garnish)
Instructions
Gather and Measure Ingredients
Measure 1 cup milk, ½ cup yogurt, ¼ cup honey, 1 tbsp softened ghee, 1 cup semolina, and 1 cup grated jaggery into separate containers.
Time: PT5M
Combine Wet Ingredients and Semolina
In a large mixing bowl, add the jaggery, then pour in the yogurt, milk, and ghee. Sprinkle the semolina over the mixture and whisk vigorously until smooth.
Time: PT5M
Rest the Batter
Cover the bowl with a clean kitchen towel and let it rest for 15 minutes. The semolina will absorb liquid and the batter will thicken.
Time: PT15M
Add Leavening Agents
Sprinkle ½ tsp baking powder and ¼ tsp baking soda over the rested batter. Gently fold with the whisk in a single direction until just combined.
Time: PT2M
Pre‑heat the Steaming Pot
Place a pinch of salt in the bottom of a wide pot, set the cake stand inside, and cover. Heat on medium flame for about 5 minutes until the pot is hot.
Time: PT5M
Prepare the Cake Tin
Line the inside of the 8‑inch cake tin with a sheet of butter paper, trimming any excess.
Time: PT2M
Steam the Cake
Pour the batter into the prepared tin, place the tin on the pre‑heated stand inside the pot, cover tightly, and cook on medium flame for 40 minutes.
Time: PT40M
Check Doneness
Remove the lid and insert a toothpick into the centre. It should come out clean with no wet batter attached.
Time: PT2M
Cool and Cover
Take the pot off the heat, keep the cake tin inside, and cover it with a clean cloth. Let it cool for about 5 minutes; this helps the cake release easily.
Time: PT5M
Demould the Cake
Place a serving plate over the tin, gently tap the bottom, and lift the tin. The cake should release cleanly onto the plate.
Time: PT2M
Garnish and Serve
Remove the butter paper, place a fresh basil leaf on top, and serve. The cake can be enjoyed warm or at room temperature.
Time: PT1M
